Today is the National Independent day and I just completed a set of pink & purple cupcakes for a sweet & young lady. Not too sure how she will celebrate this special day but her lovely friend got her a set of cupcakes for this special day. The friend specified I need to use purple as that's the b'day girl's favorite color. Pink & Purple always emulate the romance to me and reminds me of Sandra Brown.

We love smurf when when were young and all the kids wish that they could be part of the smurf community and protect them against Gargamel & his evil cat. You don't get to see the cartoon anymore as there are so many new cartoon characters on TV shows these days. I was surprised when a customer requested this theme and its one of the themes that I have not tried. It surely brought back some fond memories while I was making the figurines and I came up with Vanity, Smufette & Jokey.
The weather was playing tricks with me here and the cupcake white base go against the humidity so it turned out to be uneven. Not much time to rectify this problem and my apologies go to my understanding & friendly customer! Happy Birthday, Panga!

My recent visit to Singapore & an exploration at the FHA event was fruitful and fun! Not only that it was eye opening for me but meeting up with some old & new friends there made it even more inspiring. I finally get to try the 'Luwak' coffee some friends responded 'ewww' if you know what I mean. 2 sachet of the luwak black coffee was selling at SGD20, no kidding! The taste was not as bitter as expresso but it has hints of the roasted burnt smell. When you are at an event like this, just make sure you bring your stomach for all the food samples. That's the best part of the entire event. Taylor's College students & instructors were participating in the competition this year but unfortunately I didn't get to witness that. I wish them well and best of luck!

I finally get to make the real Black Forest cake with Kirsch. Here's the black Forest cake iced with whipped cream. Its a 3 layers cake and each layer has kirsch, cherries & whipped cream that you can't resist!

My strawberry shortcake iced with whipped cream and contains Grand Manier on the classic genoise. Decorated with toasted almond and strawberries inside out!

The Tiger, is one of the 12-year cycle of animals which appear in the Chinese zodiac related to the Chinese calendar. This is the year of tiger so I finally get to make a pair of tiger cubs. I was also told that there are few types of tiger according to the elemental signs. Overall, we have Wood/Fire/Water/Earth/Metal tiger and each actually represent different date ranges people were born in.

Attended a chocolate fair at MV last Friday. The event showcase some local & imported chocolates in different flavors. I thought there was probably some demo but there wasn't any when I was there in afternoon. The demo only started in the evening but too bad I couldn't stay longer for that session. Bought some dark chocolate that day continue with my shopping after that. As I was busy checking out the chocolates and sampling them, I saw a familiar face...Yes, Deana Yusof was there giving out some chocolate samples. Such a friendly and nice lady, I thoguht.
Was so tired after walking for about 6 hours...my feet were screaming...saw this two cute little 'friends'...

Yes, we used exotic fruits and that's 'King' of fruit - Durian as chocolate fillings. You'll appreciate these chocolates if you love durian. I tried tasting it for the first time and I liked it. We attended the class with Jay and get to play with some chocolate-making gadgets he gave out. Boy, those silicon moulds are fun and its worth to invest in. You can only learn so much during the class and only practise will make further! Now let me enjoy my chocolates...

Its a beautiful Sat and I went to Mid Valley with my sister, just to indulge in the festive season of this month. We happened to find out that there's a cupcake decoration contest with a purchase at Metrojaya. Yes, a purchase took place and I got my name on the contestant list. Each person had to decorate 5 cupcakes in an hour and I thought 'Errrr...ok'. When I saw the prizes, I told myself that I just have to do and give my best. First prize includes a 8-lessons International Certification of Patisserie At Taylor's. It also comes with a 2D/1N stay at Corus Paradise Resort at P.D plus a $100 voucher for you to shop at Metrojaya. I did win the first prize and went home happily....man, that felt great! I love my Christmas gift. At last but not least, credits go to my sister who helped to take the pic throughout the contest. She obviously liked her gift given on same day *GRIN*

Here's the easy version of Petit Four I made with butter cake with blueberry fillings, covered with fondant and top with royal icing flower. Bon appetit!

Steamed Chocolate Cake

I finally get to try the steamed chocolate cake recipe for the first time and its moist and goes extremely well with the chocolate ganache. The recipe taken from Cuisine Asia shared by Anita Khaw. You could use some really nice chocolates for a better result. I used the Van Houten cocoa powder(you can find it at most grocery stores) for the cake.

Ingredients: (Makes one 9" round cake)

185g butter
180g fine sugar
200ml evaporated milk
2 eggs, lightly beaten
125g all-purpose flour
70g cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla essence

Method:

1. Combine sugar, evaporated milk, vanilla essence and butter in a saucepan.
Stir over low heat until sugar is dissolved and butter has melted. Remove from heat.
2. Add the beaten eggs into the slightly cooled mixture and stir till well mixed.
3. Sift the flour, cocoa powder, baking powder and baking soda into a large mixing bowl. Add the eggs mixture over the flour and stir till well mixed. (Batter should be runny).
4. Heat up the steamer.
5. Lined and grease a 9-inch baking pan
6. Pour the batter into prepared pan and place into the steamer. Cover the top of the pan loosely with a piece of aluminum foil.
7. Steam over medium heat for 45 minutes. Check for doneness by inserting a skewer into the cake. If it comes out clean, it’s done.
8. Cool the cake in pan before turning out for further decoration.

Cherry Blossom Cakes

It just reminds me of the sakura trees I saw when I was in Nagoya visiting. There's no word to describe the scenery and you just have to experience it yourself someday. Imagine walking into a park in Spring and you are surrounded by hundreds of cherry blossom trees. 'WOW' is the respond I had. More chocolates? You bet. I recalled all the chocolate stores I passed by when I was in Brussels. There wasn't a street without the trace of chocolate so its a great place for chocoholics. It was an unfortunate that the chocolate muzium at Grand Place was closed or else that will be fun to visit. The local people speak French mostly and they are such a nice & friendly group. I ended up bringing back at least 20 boxes of chocolates truffles/pralines as souvenirs(sorry for those I missed). My favorite is always the dark chocolate for some reason. Perhaps its due to the bitterness that lingers in my mouth does the trick.

White/Dark Chocolate Plastique

Hola, I tried making my own chocolate plastique today and just to show you how white chocolate plastqiue rose looks like. Its perfectly yummy compare to fondant, that's for sure. You just need the round mould to cut out the chocolate plastique and place them on a rose bud one by one. Its really not that hard to achieve, all you need just a little patience and practise.

As we all know that chocolate and cocoa powder are derived from beans that contain hefty quantities of natural antioxidants. And these antioxidant are thought to be effective in helping to prevent cancer, heart disease and stroke.

The day has come...a special day for more roses(other than gum paste) but this time, it will be done with dark chocolate plastique. It can be a simple flower but its not that easy to make. You'll see my first two roses(similar to hybrid tea rose) on the chocolate cake iced with chocolate ganache covered with chocolate fondant. This is definitely a cake designed for chocoholics. If health is your excuse of eating chocolate, be 'moderate' as your nibble.

The recipe of Chocolate Plastique:

Ingredients
200g Chocolate
120g liquid glucose

Method:
1. Melt chocolate in microwave or double boiler.
2. Pour liquid glucose into melted chocolate and stir to mix.
3. Place between 2 sheets of baking paper and flatten. Leave to set overnight. Mixture will set to a hard block.

Royal Icing Recipe

Royal Icing

Ingredients:
2 pounds confectioners' sugar
10-12 Tbs, plus more if needed
6 tablespoons meringue powder
Gel-paste food coloring (optional)

Directions:
Beat sugar, water, and meringue powder with a mixer on low speed until smooth. (If icing is too thick, slowly add more water, beating to desired consistency. If icing is too thin, continue beating for 2 to 3 minutes more.) Add food coloring if desired, a drop at a time, until desired color is reached; if making more than 1 color, divide icing and work in batches. Cover the batches with clean towel before you are using them.

Wedding Cake

I just made a 3 tier wedding cake today. Kneading a 5.5 lbs fondant for the first time was challenging esp when I planned to use dark brown fondant to go with my rises. After mixing the colors and kneaded for a while...it turned out grey! Plan B! Added some voilet and make it purple, why not! The color matches with my pink gum paste roses to emulate the romance. It was such a good arm workout kneading the fondant. Very therapeutic as well! Its a simple wedding cake this time and I am glad I did it all by myself.

Organic Bread Demo

Chef Steven who's an experienced chef representing Pastry Pro demonstrated the organic breads(without oil and sugar), cakes & cookies this afternoon. His recipes are really easy to follow and all the cake mix and bread mix can be found at Wah Seng store in Ipoh. He prefer to use corn oil instead of butter for his baking and everything tasted so wonderful! At the end of the demo, it was an insightful moment when he shared his knowledge of chocolate with us. We get to bring home lots of goodies at the end of the day.

Fondant is so much easier to play with compare to butter cream so I created one that looks like this. I like the satin like finish although covering the cake with fondant the first time could be scary a little. Some people actually recommended me the economical home made type fondant esp when you are making a 3 tier cake. I have not had a chance to try that yet but it will be part of my plan next. You might think that fondant doesn't taste as good and its normally peeled off the slice of cake, so why bother? Just remember that your cake you create is going to amaze your guests and customers and that will not be 10 years from now. Hence, I am convinced to make my own fondant. Stay tuned!

Lemon Cheesecake

I made a lemon cheesecake but this time its replaced with some orange rind to give the tangy flavor. The result was fantastic. Reason being, I ran out of time to get the lemon zest so there went the improvisation. You can actually see the trace of orange rind on the sliced cheesecake.

Top pic is the less sweet butter cream and easy to make recipe I received from Rose Gianopoulos. Its not so sweet and contains the buttery flavor if you like it. I find it easier to ice the cake as well. This is a new moist chocolate cake recipe I got from Sugarcraft and it was relatively easy to prepare. The entire house smells chocolatee when the cake was almost ready...I iced the entire cake early next day. Guess what! I am all for it now!

I attended an event called East Meets West last Sat and that was surely an eye opening event for me. The ICCA founder, Rosalind Chan demonstrated the latest decorating techniques from ICES convention in U.S and shared with us(pic shown), so that was exciting. Local chef, Alex Tan also promoted some of his new products to the audience and its amazing to see how fast he could decorate 5 cakes in less than an hour. As I was busy taking pic, my phone ran out of battery! Bummer!I wish I could share more pic with you.

Warm weather today and room temperature was muggy for the icing to work. I wanted to decorate my cupcakes with flowers initially but had to change my plan. Yes, I could use fondant as plan B but time didn't permit that. I promise I will do that next.

Orange Butter Cake

Incase you are curious about the cake, this is an orange butter cake I tried(with swirl flowers on). I wish there was a cup of coffee/tea when I had it. It took me a while to ice the entire cake. Simply because I prefer less icing on my cake. It will be much easier to add more icing and trim/decorate it, honestly. Lesson learned: Sometimes you just have to stick with certain baking rules! You can see some uneven parts on the side of my cake. Such a far cry from perfect. One of our classmates, Janice was so kind that she ordered a famous butter cake from Nancy Chong and shared with entire class. The cake was yummy, not too sweet and just the way I like it:)

You can't imgaine the thrilled look on me the moment I found out there's an upcoming Wilton class close to where I stay. Without hesitation, I contacted them and next thing I know is 'I'm in , baby!'. Since I missed the first half of the course, the instructor was so kind enough to allocate her personal time to show me what I missed privately, 'Nurainie, I can't thank you enough'. She is such a wonderful lady who is fun and easy going, guilding me through the entire part step by step. I had a wonderful time decorating my first 8" cake according to her instructions. She offered me a piece of her butter cake with orange flavored filling and it was so good! At the end of the day, I spent more money buying more ingredients at the retail store again:)

We baked some chocolate moist cake(I finally found the secret!) today and it was so yummy! Everyone was given 10 cupcakes for decoration and this time I get to play with fondant & jelly, nice! Chocolate Cupcake Recipe (16 Cupcakes)

Chocolate Cupcakes (16 Cupcakes)
1/2 cup (50 grams) Dutch-processed cocoa powder
1 cup (240 ml) boiling hot water
1 1/3 cups (175 grams) all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (113 grams) unsalted butter, room temperature
1 cup (200 grams) granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract

Chocolate Cupcakes:
•Preheat oven to 375˚F (190˚C). Lightly butter 16 muffin cups with paper liners.
•In a small bowl stir until smooth the boiling hot water and the cocoa powder. Let cool to room temperature.
•In another bowl, whisk together the flour, baking powder, and salt.
•Then in the bowl of your electric mixer, or with a hand mixer, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Beat in the vanilla extract. Add the flour mixture and beat only until incorporated. Then add the cooled cocoa mixture and stir until smooth.
•Bake for about 16-20 minutes

Homemade Pineapple Tarts

I tried out different recipes for pineapple tart and the one that contains cream cheese is my favorite! However, the lines on crust looked sort of melted when it got out from the oven. Perhaps the cream cheese should be reduced next round. For some reason most people like the type that has the pineapple paste wrapped with the dough. And normally this type has a slightly different recipe that the one that has pineapple paste right on top of the crust. You do need the right tools and some patience to make that. Tips: Make everything from scratch including the pineapple paste because its tastes so much better.

Doodling can be fun!
I made some cupcakes at home last weekend (8/1) and we had lots of fun decorating them by using icing sugar & fondant. There wasn't any particular theme for the cupcake but Vickee and I were having the same thought, I guess - Ladybird & Bumble Bee. Johann made some dinasaurs(my dad thought one of it looked like lizard, oops!), Vickee made a bee and I tried a ladybird). Patience is virtue! Well, just be creative and have some fun as you go along.

Basic Vanilla Cupcake Recipe (24 cupcakes)

Ingredients:
10 oz (300g) Butter - softened
10 oz (300g) superfine (castor) sugar
12 oz (350g) self-raising flour
6 eggs
2 tsp vanilla extract

Method:
1. Pre-heat the oven to 350˚F (180˚C).
2. Line a 24 cup cake pan, with cup cake papers.
3. Crack the eggs into a cup and beat lightly with a fork.
4. Place all the ingredients in a large bowl.
5. Beat with an electric mixer for 2 minutes, until light and creamy.
6. Divide the mixture evenly between the cake cases.
7. Bake for 18-20 minutes until risen and firm to touch.
8. Allow to cool for a few minutes and then transfer to a wire rack.
9. Allow to cool fully before icing.

That is a chocolate moist cake with Liverpool logo and 10 small vanilla cupcakes from Linda in Ipoh. Let me tell ya, they were so good!
